Chocolate Chip Churro Cookies
Ingredients:
1/2c softened salted butter
1/3 c + 1 tbsp dark brown sugar
1/3c + 1 tbs granulated sugar
1 egg
1 1/4c AP flour
1/2 tsp baking soda
1/4 tsp kosher salt
5oz dark chocolate chips
Cinnamon sugar:
1 tsp ground cinnamon
2tbs granulated sugar
In a large microwave safe bowl or on the stove melt the butter with the sugars and quickly stir.
Mix in the egg.
Add the flour, baking soda, salt and mix well with a spatula.
Fold i. The chocolate chips, then chill the dough in the freezer for 15 minutes.
Combine cinnamon and sugar in a small bowl.
Divide into 12 pieces and roll into balls, then roll in the cinnamon sugar.
Place back in the freezer for 30 minutes and preheat the oven to 370-375
Bake in two batches of 6 on the center rack for 10 -12 minutes. Let sit a few moments on the pan until you can handle them, then eat warm.
